About the Chef and his business:

Hi! I’m Chef Casado and I own iSeafood Party, a Boston-based personal chef business that provides services across New England. We create meals such as seafood boils and paellas combined with a Caribbean twist to deliver unforgettable culinary experiences. My culinary inspiration comes from my Miami upbringing, as well as from my grandmother, parents, and relatives who are chefs and have taught me everything I know about the culinary arts.

Having lived in both Florida and Massachusetts, I've had the privilege of having easy access to diverse culinary influences and high-quality ingredients. Since my parents were born in the Caribbean they’ve shown me the importance of sourcing fresh and real ingredients.

Important things to note to help us prepare for your amazing dining experience:

Please…

  • Book a month in advance to lock in the date due to service demands.
  • Allow access to the property 1-2 hours before serving.
  • Note that service can take up to 4 hours depending on your party size and menu selections.
  • Notify us in advance if you need assistance setting your tableware on the dining table
  • Make sure the cookware (pots, pans, cutting boards, spoons, are easy to access. We will bring our own knives and equipment
  • Have the kitchen cleaned and space in the refrigerator.
  • Ensure that your kitchen counter space, sink, and dishwasher are cleared.
  • Ensure that there is a parking space directly in front of the home’s entrance.
  • Allow enough room for us to move around in the kitchen.
  • Ensure that pets and children stay out of the kitchen for their safety!

**For Seafood boils & Paellas Services**

Seafood boils include:

1. Choice of lobster tails, crab legs, shrimp (whole head or shelled), clams, mussels, crawfish, octopus, squid rings, potatoes, corn on the cob, hard-boiled egg, or Andouille sausage. Your selections and portions (lbs) determine the price.

2. Choice of sauce - Garlic butter or Spicy Old Bay Seasoning.

3. Always served with lemon wedges, parsley, and extra butter on the side.

4. Cooking equipment (Seafood boil pot/basket & Large tongs and spoons)

5. Everything necessary to devour the seafood (Except the table or regular napkins)

6. Served family style (Table dump or buffet style) on dining table or kitchen island

Paellas include:

1. Choice of lobster tails, crab legs, shrimp (whole head or shelled), clams, mussels, crawfish, octopus, squid rings, chicken, meat, corn on the cob or peas. Your selections and portions (lbs) determine the price.

2. Always served with lemon wedges and parsley on top.

3. Paella or Bomba rice + Secret Seasoning.

4. Served family style on dining table or kitchen island

5. Cooking Equipment (Pan, tripod, burner, hose, fire suppression blanket, spoon, etc). Outdoor on a portable burner or indoors on a gas stove only. Please note that we cannot cook this on an induction stove.

Origin of Paella:

Originating in the rice-growing areas on Spain's Mediterranean coast, the dish is especially associated with the region of Valencia. Paella takes its name from the paellera, the utensil in which it is cooked, a flat round pan with two handles; paella is traditionally eaten from the pan.

The major rice-producing regions in Spain

Andalusia, Extremadura, Catalonia, and Valencia, followed by Aragon and Navarre. Spain is the second-largest producer of rice in Europe, with 25-30% of total European production.

To prepare paella, pieces of meat such as chicken, pork, or rabbit and seafood such as clams, shrimps, mussels, crawfish, and squid are sauteed in olive oil with onions, garlic, and herbs and removed from the pan. Rice, tomatoes, saffron, and stock are simmered together, the meats and seafood mixed in, and the dish is garnished with peas, pimientos, and other vegetables. Traditional paellas are made out of doors over a wood fire.

What is Socarrat:

The word socarrat in Valencian means scorched and, although it may seem strange, it's a cooking technique used when making paella.
